That flour/baking powder mix is just so handy… I also use it for making baking powder biscuits. It is amazing all of the different things you can do with that simple mix already pre-made in your pantry. It also helps that it’s cheaper than self-rising flour or brand-name biscuit mix too.
My baking powder biscuits are simple to make:
2 cups Baking powder/flour mix
1/2 teaspoon salt
3 tablespoons vegetable shortening
3/4 cup of milk
Mix the baking powder/flour mix with the salt in a mixing bowl. Cut in the vegetable shortening with a fork. Add the milk and mix well. Knead the dough about 10 or so times, until it is smooth. Grease a baking tray. You can either use a cookie sheet or a muffin pan. Cookie sheets end up with biscuits like mounds. In a muffin pan, they come out more like flaky biscuits. You can make it into six big biscuits or twelve smaller ones.
Bake at 425 degrees for about 6-15 minutes. If they are small, check on them about 6 minutes. If they are larger, start checking on them about 10 minutes.
