Making Rocky Road

We’re making rocky road candy today. I am so excited. I love this stuff. Here is our recipe, stolen straight from my mother’s personal recipe book.

2 cups chocolate chips
14oz can sweetened condensed milk
2 tablespoons butter
10.5oz tiny marshmallows (one bag)
8oz (1 2/3 cups) unsalted roasted peanuts

In saucepan, combine chocolate, milk & butter. Heat over low until melted and remove from heat. In large bowl, combine marshmallows and peanuts. Fold in chocolate mixture. Spread in a 9×13 pan lined with wax paper. Chill for 2 hours or until firm. Remove it from the pan and peel off the paper. Cut the rocky road into squares with a wet knife.

Variations: 6 1/2 cups rice krispies or other cereal and 1-1/2 cups chopped nuts for marshmallows and peanuts.

My mother has also been known to use chow mein noodles in lieu of peanuts. Enjoy!
