Sinful Pumpkin Pecan Oatmeal Cookies

I don’t know who to credit with the original recipe, but I came across this amazingly delicious cookie at my step-sister’s aunt’s house, Shelly Gould. She passed the recipe to me, and it currently has the status of “my favorite cookie ever.” Sorry, Oreos. What can I say? I’m fickle.

3 1/2 cups flour
3 cups oatmeal
2 tsp baking soda
2 tsp cinnamon
2 tsp pure vanilla extract
1 1/2 tsp salt
3 sticks softened butter
1 3/4 cups white sugar
1 3/4 cups brown sugar
15 oz. pumpkin puree
2 large beaten eggs
1 cup of chopped pecans

1 package softened cream cheese
1 stick softened butter
4 cups powdered sugar
2 tsp vanilla extract
1-2 tablespoons milk

Beat butter and sugars together then add the pumpkin, vanilla and beaten eggs. Add in all the combined dry ingredients. mix until everything is well blended. The dough should be sticky, but not too wet. Scoop into two inch balls on a cookie sheet and bake at 350 degrees for 14 minutes or until slightly brown on top. Let cool completely. Beat all frosting ingredients together until very smooth and fluffy. Frost your cooled cookies. Dust the frosted cookies with cinnamon and chopped pecans immediately for it to stick.
